Candy Cane Shortbread Cookies
Despite the fun look of this cookie, the flavor is a bit more subtle
than many other cookies, but still very tasty. Good to have with coffee
or hot chocolate - doesn't clash!
Ingredients
1 cup shortening*
1 cup sifted confectioners sugar
1 egg
1 1/2 teaspoons almond extract
1 teaspoon vanilla
2 1/2 cups flour
1/2 teaspoon salt
Instructions
Sift together flour and salt and set aside. Mix shortening, confectioners
sugar, egg, almond extract, and vanilla extract in a large bowl.
Gradually mix in flour mixture.
Add and swirl red food coloring - mix only to swirl the coloring
around, not to blend it completely. Form the dough into cookie-sized
canes and bake on ungreased cookie sheet at 375 degrees for 7-8
minutes.
* For shortening, you may want to use butter or butter-flavor Crisco.
Although regular Crisco keeps the cookies more white, the butter
or butter-flavor Crisco adds a bit more flavor.
