Kolaczki
Kolaczki are a traditional polish pastry cookie filled with jam/fruit
filling. Since I learned to make them using pineapple filling, that's
what this recipe uses too.
Ingredients
5 or 6 cups flour
1/2 teaspoon salt
3 tablespoons sugar
1 lb. shortening
1 pkg. active dry yeast
1 cup milk
1 teaspoon vanilla
3 egg yolks
1 can crushed pineapple (1 lb. 4 oz.)
1 cup sugar
3 tbls. corn starch
Instructions
Mix all dry ingredients and add shortening. Mix as for pie crust.
Add egg yolks. Dissolve yeast in luke warm milk and then add to
the mixture. Add vanilla. Let rise for a while.
FILLING: Bring crushed pineapple, cup of sugar, and corn starch
to a boiling point in a large saucepan. Stir constantly and cook
slowly for about 5 minutes. Cool for a few hours before using. Alternately,
you could use prepared jams instead.
Roll out dough and cut into small squares (2 sq. in) and put filling
in middle (about 1/2 tsp.) in each square. Bring corners of pastry
together (to enclose the filling) and pinch the corners together.
(You can either pinch two opposite corners and make a cannoli type
shape or pinch all four corners to make a square.)
Bake in 350 degree oven for about 30 to 45 minutes. When done, sprinkle
with confectioner's sugar. Serves about 50 people.
